Cook-Up Rice Recipe (Berbice style)

Ingredients
  

  • 6 Cups Water
  • 1 Cup Brown Rice
  • 2 tbsp Salt (To taste)
  • 1 Potatoes, Cassava, Okra etc (Whatever you want to add)
  • 1 Calaloo (Spinach) (handful)
  • 1 Can Chickpeas
  • 1 Can Red Kidney Beans
  • 1 Can Coconut Milk
  • 2 Onions (Chopped)
  • 1 Can Sardine
  • 1/2 Pack Saltfish
  • Casareep Chicken (Cooked)
  • 2 Scotch bonet pepper

Instructions
 

  • Boil water in a pot
  • Add 1 cup of rice and cook for 20 minutes
  • Add 1 can of Coconut milk to the pot and boil for another 15 min
  • Start adding your Onions, Provisions, Vegetables, cooked casareep Chicken etc...
  • Once potatoes are boiled, add your Sardine and Calaloo to finish
  • Let simmer until desired.

Notes

Please note that we used can peas and beans for this recipe.
